The oak, a millennial alliance
The oak, with its majesty and longevity, has always been considered a symbol of strength and wisdom. But in addition to its symbolic value, oak plays a fundamental role in the production of whiskey. Thanks to its unique properties, oak wood gives the distillate complex aromas and a distinctive character.
Why Sicilian oak?
We have chosen to use only Sicilian oak for our barrels, a wood that grows slowly and in particularly favorable climatic conditions. Sicilian oak, thanks to its soil rich in minerals and the Mediterranean climate, develops a fine grain and a density that make it ideal for the maturation of spirits. In addition, the choice of a local wood allows us to reduce the environmental impact thanks to our reforestation program and to enhance the resources of our territory.
From the forest to the barrel: an artisan process
The transformation of oak into a barrel is a long and laborious process, which requires great skill and experience. The slats, or the wooden boards that make up the barrel, are carefully selected and subjected to a natural drying process. Subsequently, they are carved and assembled by hand, creating a unique and unrepeatable barrel.
Roasting: an alchemistic art
Roasting is a crucial step in the production of barrels. By subjecting the slats to high temperatures, a series of chemical reactions are activated which give the wood characteristic aromas and colors. Depending on the level of roasting, barrels with different aromatic profiles are obtained, which will significantly influence the final taste of the whiskey.
The final assembly: a touch of skill
Once toasted, the slats are assembled and joined with metal circles. Each joint is carefully checked to ensure perfect barrel hold. The barrel is then subjected to a rigorous quality control before being filled with our distillate.
An indissoluble bond
The choice of Sicilian oak and the craftsmanship of the production process are the basis of the uniqueness of our Sicilian Whiskey. The oak barrels, in addition to giving the distillate complex aromas and a distinctive character, represent a bridge between past and present, between tradition and innovation.
